What a change in weather! I hit the pavement as promised yesterday! I jogged and didn’t stop which was my goal. I successfully completed my goal but I thought I was going to die! Thank goodness that didn’t happen! Lol

I ate a quiche for breakfast and one of my yummy snacks this afternoon when I was craving something sweet.  Simple dinner tonight because Tuesdays are nuts in my house! Sweet potato, chicken and steamed veggies.

I now have more incentive on my journey …my annual birthday trip has been revealed! I am on strict instructions by me that I will enjoy my trip to the fullest in the body I am in.  I refuse to compare myself to others or social media.  I won’t fall prey to the stereotypical i.ages of what society says is a beautiful body.  As long as I am working on a mentally and physically  healthy me that is all that matters!  I finally know my worth and will remain on my healthy eating and exercise journey!

Set for the week

Yes it is a beautiful day why am I in the house cooking!?! I had to work today so meal prep got done too! I made these no bake treats! Here is the recipe: 3/4 almond butter or peanut butter,tbsp honey or maple syrup, 1 tsp. Vanilla. Warm that for 20 seconds in the microwave. Mix then Add 3/4 oats and 3tsp chia seeds. You can add other stuff too. I put 2tsp of flaxseed and 2tbsp of dark chocolate chips. Roll into small balls then flatten or keep round and refrigerate. Great easy snack!
I also made one of my favorite breakfast or even lunches. Egg white quiches. Egg whites seasonings of your choice and veggies cooked or not and put in ramekins or muffin tins. I bake for about 20-25 mins on 350. This morning I didn’t have anything prepared so I had a frozen turkey sausage and egg white pita. It is 150 calories and I ate mine with pico de Gallo and avocado. I have really been enjoying a big salad and I take a piece of Swiss cheese and lay smoked turkey on top and roll it tight and slice it. I add that to my salad. Protein and the cheese makes me feel like I am cheating but I am not! Today I had a cabbage salad with it.
Planning to hit the pavement this afternoon and either take a jog or ride my bike! Enjoy this beautiful day! #becauseican


Hi all! Five am wake up for workout before 8am football game for my son. All of me wanted to stay in my cozy bed. I pushed through and did a fun workout. Sometimes having someone to workout with is a nice change! Made the most wonderful breakfast! Omelet with guacamole and pico de Gallo on top!
What a change in the weather from 8am game to 1pm game! Such a mood changer! Think the dog will get a nice walk and I will enjoy all the calories I burned today with a yummy dinner!

Recipe inspiration

So I was scrolling on IG the other day and came across this picture. Everything about this platter looked amazing to me! I created my version of it tonight for dinner with what I had. I did my potato slices in my air fryer and the oven. Air fryer potato slices came out better in my opinion. I had plum tomatoes so I cut them up with my cucumbers and dressed them in vinegar and a tiny sprinkle of evoo. I swapped broccoli for string beans. Just had those yesterday. I cooked my salmon on the stove in a teriyaki sauce I got from Trader Joe’s. I last minute cut up avocado to go with cucumber and tomato because I had one that was getting to the point that if I didn’t use it that it would go bad. What a wonderful meal! The vegetables were amazing! I could have just had them!
Sometimes all we need is a little inspiration from a magazine,Pinterest or IG to figure out a new meal. Eating the same thing is easy for calorie counting but birding as hell so switch it up! Hope you had a yummy dinner like me!

Trader Joe’s Tuesday

Trader joe’s shop today! Got a few great staples to have in the house. It’s a little bit of a ride but I incorporate it when I am up that way. I heard whispers that one is opening in Brick. We shall see. I have been craving chicken shawarma so I got Trader Joe’s already marinated thighs and everything to make myself a beautiful plate of food. Planning meals works for me. Helps me keep on track and allows me to treat myself to what I want without going overboard. If I plan for it I can workout harder or swap a salad for a sandwich or something.
A workout wasn’t in the cards for me this morning. My daughter has football so the plan is to jog while she practices. Sometimes we have to be creative. Get in some exercise. Even if you do a little something while watching your favorite show tonight. #becauseican

Day 5

Happy Friday! So as happy as I am that the weekend is upon us I must say I am a little nervous about staying on track. Both kids have football and typically life is a bit crazy. This will be a good test for myself to be sure I can keep on track no matter what. I am proud to report I exceeded my one hour commitment to workout today. It was only 15 minutes but hey! So all snacks and meals with exception of dinner is in my diary and I have 1,056 left! I have drank half my body weight in water everyday this week so far and today will be no different. I went to Bingo to pick up a couple things for the weekend dinners and they have the most amazing dark chocolate covered pecans and I so badly wanted to give in and buy them for myself! A reward for doing so good all week. A food reward…not cool. I didn’t though! I walked right by them! Progress!
I would like to meal prep for the week but the end of the month is always a super tight budget so I am going to do with what I have and meal prep as soon as I can. I find it so much easier to meal prep being how busy life is! This journey is proving just how difficult juggling life and this healthy journey really is. I understand why so many say they don’t have time or can’t commit but let’s switch out CAN’T for CAN! Have a fabulous weekend!

Day 4

I made it through another day! I killed my cardio workout today! I submitted my diary with my fitness pal with over 250 calories left. I am hungry right now but I am about to go brush my teeth and relax. I wanted to share with all of you that I tried the meals delivery to my house. I did hello fresh and this week sun basket. Both were good. I think the produce in the sun basket was a little nicer. I figured I would try them out with the coupon to switch things up a bit. Hydrating is so very important! I am a water drinker so drinking water isn’t a chore to me. Be sure to drink half your body weight every day in water. I do that and I usually have a cup of plain green tea or other a day. I am seeing that keeping within my 3/4 hour eating my snacks and meals is hard for me but I am coming close to it and won’t put pressure on myself about that because I feel like I am doing really good. Today’s workout was hard because I am sore but it felt like a 1/4 of the old Meghan in beast mode was there to pull me through. Now for some rest. Tomorrow is another day. Let’s bring each other up. Empower one another! #becauseican
